I'm working on two deer shoulders, I've already smoked medium to hot smoked steady for 2 1/2 hrs. , they are cooked but still not smoked. I usually use smaller pieces of ham but I had these and thought hell I'll try the whole thing....... If ye have ever done this, How long did it take ?

MMM--Goode dang Ven. I salted them 24 hrs. and drew out a quart of liquid first.

Yes indeed. Headed out again today as a matter of fact! Hopefully they are on the move. If not, well I will at least enjoy a day in the woods and get a bit of a hike in.

I've got two favorite ways to cook deer, but this smoked is the best.

Don't bother. They are hard to light and the venison buzz is lacking.
