Hey you smokers

Post by steelbuttplate »

I'm working on two deer shoulders, I've already smoked medium to hot smoked steady for 2 1/2 hrs. , they are cooked but still not smoked. I usually use smaller pieces of ham but I had these and thought hell I'll try the whole thing....... If ye have ever done this, How long did it take ? :BBQ: MMM--Goode dang Ven. I salted them 24 hrs. and drew out a quart of liquid first.

Yes indeed. Headed out again today as a matter of fact! Hopefully they are on the move. If not, well I will at least enjoy a day in the woods and get a bit of a hike in.

I've got two favorite ways to cook deer, but this smoked is the best.

Don't bother. They are hard to light and the venison buzz is lacking.
“Freedom is the right to tell people what they do not want to hear.” George Orwell, English novelist, essayist, and critic, 1903-1950

Of all tyrannies, a tyranny sincerely exercised for the good of its victims may be the most oppressive. It would be better to live under robber barons than under omnipotent moral busybodies. The robber baron's cruelty may sometimes sleep, his cupidity may at some point be satiated; but those who torment us for our own good will torment us without end for they do so with the approval of their own conscience.
